Erbaluce di Caluso Passito “Talin” 2016 – Ilaria Salvetti
Erbaluce di Caluso Passito “Talin” 2016 by Ilaria Salvetti is a refined sweet wine, crafted from carefully selected grapes from morainic hills in Caluso, at 350 meters above sea level. The soils, rich in pebbles, gravel, and sands left by glacial retreat, impart mineral notes and structure to the wine.
Grapes are hand-harvested and naturally dried on bamboo mats for three months. Fermentation occurs spontaneously with indigenous yeasts in temperature-controlled stainless steel tanks. The wine matures for 60 months in used oak barrels and additional months in bottle, developing aromatic complexity and a harmonious taste profile.
Visually, the wine is golden yellow with amber reflections. The nose offers an intense bouquet of dried apricots, figs, candied citrus peel, and acacia honey. On the palate, it is soft, elegant, complex, with sweetness perfectly balanced by freshness and sapidity, resulting in a smooth and persistent finish.
This organic passito pairs perfectly with blue cheeses, dry pastries, or nut-based desserts, showcasing the craftsmanship of Ilaria Salvetti, and the expressive qualities of the autochthonous Erbaluce grape and the Canavese terroir.
