Chablis 1er Cru “Montée de Tonnerre” 2017 Vincent Dauvissat
The Chablis 1er Cru “Montée de Tonnerre” from Domaine Vincent Dauvissat is widely regarded as one of the finest expressions of Chablis. Located on the right bank of the Serein river, this Premier Cru is often compared to Grand Cru vineyards thanks to its ideal exposure and Kimmeridgian limestone soils rich in marine fossils.
Domaine Dauvissat is one of Burgundy’s benchmark producers, known for its traditional, low-intervention approach that highlights terroir expression. The wine is made from 100% Chardonnay, sourced from mature vines and harvested by hand. Fermentation is carried out with native yeasts, preserving authenticity and precision.
Aging takes place in oak barrels, mostly used, over an extended period, allowing the wine to gain complexity while maintaining freshness and purity. The oak influence is subtle and perfectly integrated.
In the glass, it shows a bright pale yellow color with green reflections. The nose is refined and layered, offering aromas of lemon, grapefruit, green apple, along with white flowers, herbal notes, and pronounced minerality reminiscent of flint and seashells.
On the palate, it is tense, precise, and vibrant, with lively acidity supporting a structured and elegant body. The saline, mineral backbone leads to a long and persistent finish, with excellent aging potential.
The Montée de Tonnerre is ideal with oysters, shellfish, raw fish, and refined seafood dishes, and can also evolve beautifully with time in the cellar.
