Chablis 1er Cru La Forest 2013 from Domaine Vincent Dauvissat is one of the most iconic and structured expressions of the appellation, sourced from the estate’s most important Premier Cru holding. Located on the left bank of the Serein, La Forest is defined by Kimmeridgian limestone soils rich in marine fossils, giving the wine a strong mineral identity. The nose reveals green apple, citrus, white peach and floral notes, supported by a deep chalky and stony backbone. On the palate it is dense, precise and vibrant, with remarkable depth and acidity. The finish is very long, saline and highly complex with outstanding ageing potential.

Chablis 1er Cru La Forest 2013 Domaine Vincent Dauvissat is one of the absolute benchmarks of Premier Cru Chablis and a cornerstone of Domaine Vincent Dauvissat’s legendary portfolio, a global reference for precision, purity and ageing potential.

The La Forest climat, located on the left bank of the Serein River, is one of the largest and most prestigious Premier Cru sites in Chablis. Domaine Dauvissat farms approximately 3.7 hectares out of the total 13.85 hectares, producing one of the most structured and profound expressions of this terroir. Its south-facing exposure and balanced microclimate ensure optimal ripening while preserving essential acidity and tension.

The soils are composed of Kimmeridgian limestone and marl rich in marine fossils, overlain with stony and clay-rich topsoil. This complex geological structure is responsible for the wine’s hallmark chalky, saline and mineral-driven character.

Viticulture at Vincent Dauvissat follows non-certified biodynamic principles since 2002, with strict yield control and meticulous hand harvesting. Each parcel is picked at optimal ripeness to maintain balance between freshness and aromatic richness.

Winemaking is traditional and minimal intervention: whole-cluster gentle pressing, spontaneous fermentation with indigenous yeasts primarily in stainless steel, and ageing for 12–18 months in neutral oak barrels, without bâtonnage, to preserve terroir purity.

The wine shows a layered and complex aromatic profile. The nose opens with ripe citrus, green apple, white peach and white flowers, evolving into deeper notes of honey, dried fruit and pronounced mineral undertones.

On the palate it is broad, dense and highly precise, combining volume and tension in perfect harmony. The acidity is seamlessly integrated, driving a vertical and persistent progression.

The finish is very long, saline and highly age-worthy, with flint, citrus and marine echoes. It is a wine that perfectly embodies the Dauvissat philosophy: purity, depth and extraordinary ageing capacity.

A Premier Cru widely regarded as approaching Grand Cru level in structure and longevity.

The Domaine Dauvissat is considered one of the two fathers of Chablis wines together with the former Domaine Ravaneau, thanks to wines with an unmistakable style, with a superior technique and absolute purity. 

Since 2002, Domaine Dauvissat has been working in biodynamic agriculture, the natural wines of Dauvissat are born spontaneous fermentations, without clarification and batonnage. The vinification and subsequent maturation of the Chablis Dauvissat wines takes place according to tradition in steel and for a small part in wood, without ever exceeding, there is in fact no trace of wood on tasting.

Domaine Dauvissat has 14 hectares of which 2.70ha of Chablis Grand Cru for an average production of 80,000 bottles.

The Chablis Dauvissat are wines already enjoyable in their youth with a full and elegant juice but with almost infinite aging capacity, given the size of the Domaine, unfortunately the bottles are subject to speculation and are in fact unobtainable in the market.
