Julie Févre Chablis 1er Cru Fourchaume 2023 is a refined Chardonnay that expresses the identity of one of Chablis' most prestigious terroirs in northern Burgundy. The Fourchaume climat is characterised by its gently sloping, east-facing vineyards, where exposure to the morning sun encourages the soil to warm up and promotes balanced grape ripening. These conditions allow Chardonnay to develop aromatic intensity, freshness and complexity while retaining the precision that defines the finest wines of the appellation.
The vines, planted between 1942 and 1989, grow on Kimmeridgian limestone soils containing marine fossils, including Exogyra virgula. This distinctive geological composition contributes to the wine's depth and pronounced mineral character. The result is a Chablis in which the richness of the fruit combines with a vibrant, focused structure without compromising elegance.
In the cellar, the wine is fermented and aged in temperature-controlled stainless steel tanks, remaining on its fine lees to develop greater texture and complexity while preserving the purity of the Chardonnay fruit. This approach allows the character of the vineyard to remain at the forefront, without excessive winemaking influence. Moderate filtration precedes bottling, after which the wine rests in temperature-controlled cellars before release.
In the glass, it displays a pale straw-yellow colour with golden highlights. The aromatic profile is harmonious and inviting, revealing fresh fruit and delicate floral nuances alongside a distinctive mineral dimension. On the palate, it is rich yet balanced, with lively freshness supporting the wine's structure and carrying it towards a long, elegant and persistent finish.
Chablis Premier Cru Fourchaume 2023 is an excellent match for shellfish, seafood and grilled fish. Its structure also makes it a versatile partner for white meats, asparagus and spiced dishes, including selected curry-based recipes. To appreciate its freshness and aromatic complexity, serve at 8–10°C.
