Petit Chablis Dame Nature 2025 La Chablisienne
Petit Chablis Dame Nature 2025 by La Chablisienne comes from northern Burgundy, where Chardonnay finds a distinctive expression in the limestone-rich landscapes surrounding Chablis. Produced by the historic cooperative winery La Chablisienne, this organic white wine reflects a thoughtful approach to winemaking, focused on preserving fruit purity and the character of the appellation. Both vineyard management and vinification follow ECOCERT-certified organic standards.
The grapes are sourced from vineyards in Chablis and Saint-Cyr-les-Colons, planted on Portlandian clay-limestone soils, which differ from the Kimmeridgian formations found in other parts of the region. The vines average around fifteen years of age, with a planting density of approximately 6,500 vines per hectare. Different vineyard exposures contribute to the balance and complexity of the final blend.
Winemaking begins with cold static clarification, followed by alcoholic and malolactic fermentation in tanks. The wine then undergoes ageing on fine lees in stainless steel, developing a fuller texture while retaining the clarity and freshness associated with Petit Chablis.
In the glass, it displays a pale golden colour with brilliant clarity. The nose initially reveals a complex combination of ripe fruit and dried fruit, particularly hazelnut. With aeration, delicate jasmine notes emerge, adding a floral dimension to the bouquet. The palate is fruity, juicy and pleasantly full, with a sense of density balanced by lively freshness. The finish is long and defined by a subtle saline character, bringing a mineral impression that lingers after each sip.
Petit Chablis Dame Nature 2025 pairs naturally with white fish, mushroom risotto and cheeses such as Chaource and Époisses. An organic Chardonnay that brings together ripe fruit, floral delicacy and savoury freshness, offering an elegant expression of the Petit Chablis appellation through the experience and expertise of La Chablisienne.
