The Yarden Chardonnay Odem Organic Vineyard 2021 is one of the finest expressions of Chardonnay produced by Golan Heights Winery, a pioneer of Israeli premium winemaking. The wine comes from the Odem Organic Vineyard, Israel’s highest vineyard, located at nearly 1,200 meters above sea level on the Golan Heights. Thanks to its altitude, volcanic soils and cool climate, the vineyard provides ideal conditions for growing Chardonnay grapes with great freshness, balance and aromatic intensity.
Planted in 1989 and organically farmed since 1998, the Odem Vineyard has become a benchmark for sustainable viticulture in Israel. The grapes are hand-harvested, fermented with traditional methods and the wine is then aged sur lies in French oak barrels for 7 months, a process that adds creaminess, depth and elegant notes of vanilla and pastry.
In the glass, it reveals a sophisticated bouquet: ripe pear, lemon and tropical fruit blend harmoniously with floral hints and mineral undertones, enriched by subtle nuances of freshly baked croissant. On the palate it is round, structured and elegant, with remarkable minerality and a long, tasty finish that lingers.
The Yarden Chardonnay Odem Organic Vineyard 2021 is enjoyable upon release but also has the potential to age gracefully for up to 8 years from vintage, gaining complexity and layered aromas over time. It pairs beautifully with refined dishes such as pan-seared salmon, chicken in Chardonnay sauce, savory pumpkin ravioli or soft-aged cheeses.
