Hora Prima 2021 is a refined expression of the winemaking philosophy of Tenuta Mosole, where precision and craftsmanship enhance the character of the territory. This white wine is a blend of Chardonnay, Tai and Sauvignon, each vinified separately to preserve its varietal identity.
Hand-harvested grapes from vineyards surrounding the winery undergo a gentle pressing with a horizontal pneumatic press, ensuring a clean must free from unwanted vegetal notes. After temperature-controlled settling, fermentation follows two distinct paths: Chardonnay ferments and ages in 500-liter oak tonneaux, while Tai and Sauvignon ferment in stainless steel tanks, maintaining freshness and aromatic clarity.
Throughout winter, weekly tastings guide the decision to perform batonnage, a technique that keeps the lees in suspension to enrich the wine’s texture and complexity. The 12-month aging in oak allows Chardonnay to develop roundness, depth and elegant aromatic nuances, with carefully selected barrels ensuring subtle integration of wood.
After aging, the wines are blended in stainless steel tanks to achieve balance and clarity before bottling. The result is a wine that is intense, persistent and harmonious, combining richness with remarkable verticality.
