The Savigny-lès-Beaune Aux Grands Liards 2021 by Simon Bize delivers remarkable depth and personality for a village-level Burgundy. Sourced from vines planted between 1939 and 2019, just below the premier cru Les Lavières, the vineyard features red clay, gravel, and limestone soils that contribute to the wine’s richness and complexity.
The vinification is 100% whole cluster, with a 4–5 day cold maceration, spontaneous fermentation using native yeasts, pump-overs, and gentle foot punch-downs. The wine is then aged for 12 to 18 months in French oak barrels, with up to 20% new oak.
On the nose, it offers smoky blackberry, red fruit, spice, and earthy undertones. The palate is fleshy, textured, and sapid, with fine tannins and a slightly austere, mineral-driven finish that speaks to its aging potential.
