The Saumur Rouge “Îlot des Biches” 2023 is crafted by Domaine de l’Enchantoir from vineyards located on the lower slopes of the Brossay plateau, where ancient Jurassic soils rich in flint and iron give Cabernet Franc remarkable freshness and mineral definition. The name, meaning “Island of the Does,” pays tribute to the local wildlife, as deer regularly seek refuge among the vines and feast on the ripe grapes, reflecting the estate’s close relationship with its natural environment.
The vineyards are farmed with great respect for the ecosystem, and the grapes are hand-harvested to ensure perfect fruit selection. In the winery, the objective is to preserve the purity and brightness of Cabernet Franc, producing a wine that highlights freshness, drinkability and terroir expression rather than extraction or excessive power.
In the glass, it displays a bright ruby-red colour. The nose is expressive and inviting, revealing red cherry, raspberry, blackberry and redcurrant, complemented by delicate floral aromas, subtle spice and a refined mineral edge that reflects the unique composition of the soils.
The palate is fresh, lively and beautifully balanced, with silky tannins and vibrant acidity providing remarkable energy and finesse. Juicy fruit flavours unfold across a supple texture, leading to a long, clean finish marked by elegant minerality and impressive persistence.
Îlot des Biches is a wonderfully approachable yet characterful Loire Cabernet Franc, perfect alongside charcuterie, grilled meats, roast poultry and rustic French cuisine, while its freshness also makes it an excellent wine to enjoy with friends on informal occasions.
