The Recioto della Valpolicella DOCG Classico “Tomo XIV” 2015 is Eleva’s homage to one of the oldest and noblest traditions of Valpolicella winemaking. Produced in the celebrated Conca d’Oro of Sant’Ambrogio di Valpolicella, it embodies the richness and elegance of this historic terroir.
The blend consists of Corvina Veronese (40%), Corvinone (20%), Rondinella (25%), and 15% of other authorized varieties such as Croatina, Teroldego, Merlot, and Oseleta. Harvesting takes place manually in mid-September, with grapes placed in small crates and left to dry in ventilated lofts (fruttai) for 120 days, a process that enhances sugar concentration and aromatic depth.
In February, after the drying period, the grapes are destemmed, gently crushed, and fermented in stainless steel for 30-35 days with extended maceration. The defining feature of Recioto lies in the interruption of fermentation, which preserves the natural sweetness that makes this wine unique. Aging in oak barriques enriches its bouquet, followed by at least 9 months of bottle refinement.
In the glass, it offers a deep, velvety, and enveloping character, with aromas of cherry liqueur, dried plums, chocolate, and spices. A prestigious sweet red, perfect with blue cheeses, chocolate-based desserts, or simply as a wine for pure meditation.
