The Erbaluce di Caluso Pas Dosé Metodo Classico by Ilaria Salvetti is a refined sparkling wine that expresses the purity and freshness of the Erbaluce grape, native to the Canavese area in northern Piedmont. Produced according to organic farming principles, the grapes come from hillside vineyards in Caluso at around 350 meters above sea level, on morainic soils rich in stones that ensure excellent drainage and minerality.
Fermentation occurs spontaneously with indigenous yeasts, followed by 29–30 months of ageing on the lees before disgorgement. No sugar dosage is added, allowing the wine to fully display its natural character.
