Monferrato Bianco “Debico” represents the purest expression of Sauvignon Blanc cultivated in Piedmont. Cascina Christiana reinterprets this international grape through a lens of elegance and precision, staying true to its philosophy of purity and authenticity.
The name “Debico” reflects the untamed spirit of Sauvignon, inspired by the French word sauvage—a nod to the grape’s natural and vibrant character. The grapes, harvested by hand at full ripeness, come from hillside vineyards with excellent exposure, where calcareous and clayey soils impart minerality and freshness to the final wine.
Fermentation takes place exclusively in temperature-controlled stainless steel tanks, preserving the varietal’s characteristic aromatic profile: notes of gooseberry, elderflower, tomato leaf, and delicate hints of citrus and exotic fruit. The wine rests on fine lees for several months, gaining structure and complexity without losing its crisp vitality.
In the glass, Debico shows a bright straw-yellow color with greenish hues, highlighting its youth.
