Il Rosato 2021 Collecapretta
Rosato 2021 is a natural wine produced by the Umbra Collecapretta winery, obtained from the rosé vinification with brief maceration on the skins of red Ciliegiolo grapes harvested at the beginning of October. The must obtained ferments spontaneously without added yeasts and without temperature control in open truncated conical containers.
After racking, it matures all winter in vitrified cement barrels and acquires clarity thanks to the cold and two racking operations, one in December and one at the end of February following the waning moon. No sulphur is added at any stage of processing, not even in the final bottling.
In the vineyard, principles of absolute respect for nature are followed (use of sulphur and copper) and only rarely is the soil enriched with fertiliser from the estate's animals. The Rosato 2021 Collecapretta expresses a peach blossom pink colour to the eye, while the nose offers scents of flowers, gingerbread and earthy notes. The sip is soft, balanced and has a broad finish. With these characteristics, the Collecapretta Rosato wine is the ideal companion for the most difficult pairings such as spicy and spicy dishes.
