"Il Rosato di Casa Mattioli" 2022 Collecapretta
"The Rosato di Casa Mattioli" by Collecapretta is an exceptional rosé wine, made from Ciliegiolo grapes that embody profound generosity and warmth. This welcoming wine opens with aromas of flowers, malt, and spice bread, with a persistent earthy accent that adds complexity. On the palate, it distinguishes itself with a vigorous and inviting texture, while the creamy and broad finish leaves a lasting impression.
Its soothing capacity makes it a versatile companion for demanding dishes, such as spicy and oriental spiced cuisine, as well as raw meats. This peach blossom rosé wine is obtained through a white vinification of red Ciliegiolo grapes, harvested at the beginning of October. The must ferments freely without the addition of yeasts and without temperature control in open truncated cone containers. After racking, the wine matures in vitrified cement barrels throughout the winter, achieving clarity through cold temperatures and targeted rackings following the moon phases.
Throughout the entire production process, no sulfur is added, ensuring the most natural wine possible. In the vineyards, an approach of absolute respect for nature is adopted, using sulfur and copper sparingly and occasionally employing fertilizer from the farm's animals.
