The 2016 Gevrey-Chambertin comes from carefully selected vineyards cultivated according to organic principles, reflecting the true character of the terroir. Grapes are hand-harvested and rigorously sorted both in the vineyard and the winery, ensuring only the best clusters enter fermentation.
Vinification involves partial destemming (30–50%) and meticulous attention to tannin extraction, aiming for structure and finesse without over-extraction. Aging takes place in oak barrels, partially new, which enhances complexity, depth, and elegance. The nose shows spices, ripe red fruits, subtle balsamic hints, and a touch of menthol, while the palate is full-bodied, harmonious, with silky tannins and a long, persistent finish.
