Champagne Rosé de Saignée Extra Brut – Robert Barbichon
Robert Barbichon’s Rosé de Saignée Extra Brut is a genuine and vibrant expression of the Côte des Bar, in the southern Champagne region. Produced using the traditional saignée method, it involves a short maceration of red grapes to extract color and intense aromas, resulting in a deep rosé hue and a structure reminiscent of light red wines.
Comprising 70% Pinot Noir and 30% Meunier from biodynamically farmed vineyards, this Champagne undergoes over 36 months of lees aging, developing complexity and depth. With a minimal dosage of approximately 1.5 g/l, it is classified as Extra Brut.
On the nose, it reveals notes of red berries, apricot, and white peach, complemented by floral and herbal nuances. The palate is fresh and mineral, with lively acidity balancing the vinosity, and fine bubbles leading to a long, savory finish.
This Champagne pairs excellently with seafood dishes, white meats, and soft cheeses, making it an excellent choice for those seeking a rosé with character and authenticity.
