Champagne Les Dionysiaques Delalot
The Champagne Les Dionysiaques by Maison Delalot is a variable-geometry cuvée that perfectly embodies the tradition of terroir-driven Champagnes. Produced in Charly-sur-Marne in the heart of the Vallée de la Marne, it is an assemblage of the region’s three main grape varieties, with a majority of Meunier (60%), complemented by Chardonnay (20%) and Pinot Noir (20%).
Fermentation takes place mainly in stainless steel, with a partial maturation of around 20 days in oak barrels, enhancing both texture and aromatic depth. Secondary fermentation (tirage) occurs in spring, with disgorgement carried out every October during the waning moon, in line with the artisanal and precise philosophy of the estate.
On the nose, Les Dionysiaques reveals a gourmet bouquet of pastry, cream, roasted hazelnut, peach, and baked apple, lifted by a final zest of lemon. The 11 g/l dosage, faithful to the classical Brut style, is perfectly balanced by freshness and a finely chiselled sapidity, ensuring a vibrant and harmonious palate.
A festive and versatile Champagne, it is perfectly suited for celebrations and pairs beautifully with foie gras (raw or cooked), refined starters, and rich French cuisine.
