The name of this natural wine is composed of a single plot of 22 ares, planted on a clay-limestone soil with a very fine clay texture.
The vine, 45 years old, produces between 8 and 10 hl representing about 1200 bottles and the harvest is done manually, with the selection in the vineyard by the binders, so a second sorting is carried out in the cellar on a sorting table. < / p>
Natural wine grapes are 100% de-stemmed and sent to the wine-making tank for a period of about 15 days, with 4-5 days of cold maceration (from 13 to 14 ° C), then fermentation progress, with pigeage 2 times a day.
When all the sugars in natural wine are converted into alcohol, they are drawn off and pressed.
This natural wine is then divided into barrels: ¼ new oak barrels, ¾ wine barrels.
The racking takes place after malolactic fermentation and the mixture of natural wine is made at the time of bottling.
