There are two vineyard plots of the Domaine Thierry Mortet in this village, one of 40 hectares of 20 years of age, the other of 30 hectares of about forty years. These vines are planted on calcareous clay soils, composed of many small pebbles and a soil with its very fine clays. The average production is from 3000 to 3500 bottles. Agriculture has been organic since 2007.
Harvesting is done manually, with selection in the vineyard by pickers, so a second sorting is carried out in the cellar on a sorting table. The grapes are 100% de-stemmed and sent to the wine-making vat for a period of about 15 days, with 4-5 days of cold maceration (from 13 to 14 ° C), then fermentation progress, with pressing twice a day .
The wines are then divided into barrels: aging of 1/3 of new barrels, 1/3 of wine barrels and 1/3 barrels of 2 wines. The racking takes place after malolactic fermentation. The wine mixture is made at the time of bottling. The aging period of Gevrey-Chambertin "Vigne Belle" is around 16 months.
The Vigne Belle terroir gives this organic wine one of the best expressions in this village. It offers a very thin and complex nose. A sweet and gentle attack on the palate that assumes an aromatic volume, complexity and length close to the splendor of a 1er Cru.
It goes well with white meat and roast veal in its youth and a little play with hair or feathers with aging.
