Chablis 1er Cru L’Homme Mort 2019 La Chablisienne is one of the most distinctive Premier Cru wines produced by La Chablisienne. Located on the right bank of the Serein River in the commune of Maligny, at the far end of the prestigious Fourchaume sector, this vineyard benefits from a south-west exposure that promotes optimal ripening while preserving the freshness that defines great Chablis.
The vines, averaging around 25 years of age, are planted on classic Kimmeridgian clay-limestone soils rich in marine fossils. This unique geological foundation provides the wine with its characteristic mineral tension, saline complexity and remarkable ageing potential.
The winemaking approach employed by La Chablisienne begins with cold static settling before fermentation. Both alcoholic and malolactic fermentations take place in a combination of stainless steel tanks and oak barrels, allowing the wine to retain freshness while gaining texture and complexity. Ageing continues for approximately twelve months on fine lees in both vessels.
The wine displays a brilliant pale gold colour with delicate golden reflections. The nose initially shows concentrated aromas of fresh fruit and subtle oak influence. With aeration, more delicate floral notes emerge, particularly honeysuckle, alongside refined mineral nuances.
On the palate, it offers excellent energy, concentration and balance. The rich texture is supported by vibrant acidity and a pronounced saline backbone that carries the wine through a long and persistent finish. Toasted bread and lightly roasted notes add further complexity and depth.
A Premier Cru with impressive structure and ageing potential, perfectly suited to refined gastronomic pairings such as herb-roasted pork, white meats and sophisticated aperitif dishes.
