The Chablis Premier Cru “Mont de Milieu” 2019 by Charly Nicolle is a superb expression of the Chablis terroir, located in the Yonne department of Burgundy. Sourced from the historic Mont de Milieu climat in Fleys, this Premier Cru comes from vines aged 50–60 years, planted on Kimmeridgian marl soils, which impart remarkable minerality and aromatic complexity.
Produced entirely from Chardonnay, the wine undergoes controlled alcoholic fermentation (16–18°C) and complete malolactic fermentation. Aging takes place in stainless steel tanks (25–55 hl) and 400-liter demi-muids, with 12–16 months sur lie, providing structure, creaminess, and aromatic persistence. Tartrate stabilization with cellulose gum and tangential filtration ensure clarity and precision.
The wine shows a bright, clear straw-yellow color. On the nose, delicate floral aromas of acacia combine with mineral notes from the terroir and hints of ripe fruit. The palate reveals a perfect balance of minerality, roundness, and freshness, with full body and long, refined persistence. This Chablis Premier Cru is best served at 12°C and can be enjoyed immediately or cellared for 5–7 years, gaining further complexity over time.
The name “Mont de Milieu” recalls the historic period when Chablis was part of the County of Champagne. Today, the vineyard on the right bank of the Serein hosts some of the oldest vines, producing wines of exceptional depth, intensity, and finesse, a true symbol of Burgundy’s tradition and excellence.
