The Bourgogne Côtes d’Auxerre Corps de Garde Blanc 2018 by Goisot is a white wine of great character, a true expression of northern Burgundy’s tradition and terroir. The Goisot family has been cultivating their vineyards with a fully organic and biodynamic approach, preserving biodiversity and respecting the environment.
This cuvée is made from 100% Chardonnay, grown on Kimmeridgian and Oxfordian limestone soils that give the wine its distinctive minerality. The average age of the vines and the careful, low-yield cultivation contribute to a wine that combines depth, power and elegance.
In the glass, it shows a bright golden color. The bouquet is rich and layered, with aromas of ripe peach, green apple and pear, followed by subtle toasted and spicy notes of cinnamon, vanilla and fresh almond from barrel maturation. With age, delicate buttery nuances and mineral undertones further enhance its complexity.
On the palate, it displays both structure and finesse, with a broad texture, lively acidity and perfect balance. The finish is long, persistent and marked by fruit and mineral echoes. Thanks to its build and structure, it has excellent aging potential: it can be enjoyed after 4 years of cellaring and will evolve beautifully for over a decade in the best vintages.
Food pairings include refined dishes such as seafood, noble poultry, seared foie gras and traditional Burgundy cheeses like Mont d’Or, Époisses, Langres and Soumaintrain. Served at 12-13°C, it reveals all its elegance and depth.
