The Bourgogne Hautes-Côtes de Beaune “Bellis Perennis” 2021 from Domaine Naudin Ferrand is a prime example of Chardonnay from the Hautes-Côtes de Beaune, where natural vinification and meticulous vineyard work yield a white wine of great elegance and complexity. The domaine selected its two finest parcels, “En Daisey” in Magny-lès-Villers and “En Bully” in Pernand-Vergelesses, both south-facing, to highlight terroir typicity and enable an alternative vinification without added sulfites.
Harvesting is manual, with gentle whole-cluster pressing to preserve delicacy and freshness. Carboglace inerting and natural decanting without enzymes ensure minimal intervention. Alcoholic and malolactic fermentation occur naturally in oak barrels, with 12 months aging on lees. Racking and blending are done by gravity, and the wine is bottled unfiltered, with minimal sulfites only to ensure transport and aging.
The wine shows a pale color, with a nose of elegant complexity: minerality, citrus, and subtle toasted oak. On the palate, it is pure, balanced, and harmonious, with oak well integrated and fresh fruitiness maintaining vibrancy. Its acid-salt balance invites food pairing, making it perfect with river fish, roasted poultry, veal quenelles, saffron risotto, or mature goat cheeses.
