The Saint-Aubin 1er Cru “Derrière Chez Edouard” 2023 is a prestigious Burgundy white wine produced by Domaine Hubert Lamy. The Chardonnay grapes come from approximately 1.5 hectares of vineyards, located at an altitude between 300 and 350 meters above sea level, with a south-east exposure.
The soil is composed of white limestone rich in stones, particularly well suited to Chardonnay, contributing to the wine’s mineral character and precision. Fermentation occurs spontaneously in oak barrels, followed by an aging period of 18 months in 300 and 600-liter oak barrels, with about 10% new oak and the remaining 90% in used barrels. Malolactic fermentation is also carried out in wood.
In the glass, the wine shows a deep golden yellow color. The nose is complex, offering aromas of yellow fruit, flowers, dried fruit, honey and mineral notes. On the palate, it is deep and layered, with great balance, leading to a fresh and very persistent finish.
