The Beaune “Clos des Renardes” Blanc 2023 showcases the refined craftsmanship of Fanny Sabre, who has been managing the family domaine since 2006. After training with Philippe Pacalet, she embraced a style defined by purity, balance and finesse, producing micro-cuvées from only 4 hectares of organically farmed vines. Her work in the vineyard is meticulous: controlled yields, soils treated with homemade preparations, and careful manual harvesting.
The Clos des Renardes cuvée comes from Chardonnay vines cultivated and vinified with a natural, low-intervention philosophy. Fermentation occurs with indigenous yeasts, extraction is minimal, and bâtonnage is kept to a minimum to maintain tension and precision. Aromatically, the wine opens with citrus notes, white flowers, ripe pear and a delicate spicy touch. On the palate, it is tense, saline and laser-focused, with a fresh, almost northern-style character that elevates its elegance. The texture is ample but never heavy, leading into a long, subtly spicy finish.
This is an impressive white Beaune, expressing both the personality of the terroir and Fanny Sabre’s signature precision. It drinks beautifully now but will continue to evolve gracefully for 5–10 years. Ideal with grilled fish, roasted turbot, squid risotto, poultry dishes and refined white meats.
