Produced by Enrico Serafino, the Barbera d’Alba San Defendente Superiore DOC 2015 showcases the richness and evolution of Piedmont’s Barbera grape. The grapes come from vineyards in San Defendente, Canale, trained with the Guyot system on sandy and silty soils with south to southwest exposure.
Harvested entirely by hand, the grapes undergo meticulous selection and gentle treatment, including the use of dry ice to minimize oxidation and sulfites. Fermentation takes place in stainless steel tanks and truncated cone wooden vats at controlled temperatures, with a maceration exceeding 18 days enhanced by délestage and submerged cap techniques to maximize aroma and tannin extraction.
The wine ages for 18 months in medium-sized oak barrels and partially in barriques, imparting refined structure and pleasant softness. Its intense ruby red color with violet hues is matched by a broad, complex bouquet featuring violet, cherry, currant, spices, and tobacco notes.
On the palate, the San Defendente is rich, fresh, and velvety, with a full body and fine structure balanced by silky acidity that complements the oak maturation.
