Barbera d’Alba Pajena 2020 Enrico Serafino
The Barbera d’Alba Pajena 2020 stands out as one of the most elegant and surprising expressions of Piedmont’s Barbera, produced by Enrico Serafino from handpicked grapes grown in the Canale, Priocca, Govone, and Santa Vittoria vineyards. These Guyot-trained vines thrive on sandy and silty soils with south to southwest exposure, ensuring optimal ripening.
Harvesting is entirely manual, with meticulous grape selection and gentle handling, including the use of dry ice to prevent oxidation and minimize sulfites. Fermentation takes place in stainless steel tanks at controlled temperatures, with a maceration lasting over 18 days accompanied by délestage, enhancing the wine’s structure and complexity.
The wine matures for 14 months in medium-sized oak barrels (2,500-4,000 liters), which soften its acidity and add a fine, velvety texture. The result is a Barbera with an intense ruby red color and violet reflections, featuring aromas of violet, cherry, currant, plum, and spices. On the palate, it is fresh, smooth, medium to full-bodied, well-balanced and harmonious.
