The Domaine de La Renardiere winery, founded in 1990 by Jean Michel Petit, is committed to organic farming, reflecting a deep respect for the environment and surrounding biodiversity. Jean Michel, with international training, brought his experience back from California to his homeland, creating wines that tell the story and terroir of Jura.
The vines, with over 30 years of age, root themselves in calcareous-clayey red marls, giving Ploussard a unique foundation. Fermentation takes place in steel with indigenous yeasts, followed by a maceration of about ten days on the skins. After this period, the wine rests for 12 months in large barrels before being bottled unfiltered.
The result is a light ruby red with delicate tannic structure and medium body. The bouquet opens with spicy aromas, aromatic herbs, ripe blackberries, and suggestions of undergrowth, accompanied by light mineral nuances of graphite. On the palate, Ploussard presents a balanced structure, with fruity, fragrant, and juicy notes leading to a fresh and taut finish, underscored by a pleasant saline vein.
