Alta Langa Pas Dosé “Psea” 2018 Pecchenino
The Alta Langa Pas Dosé “Psea” 2018 from Pecchenino is a Metodo Classico of remarkable personality, showcasing the elegance and freshness typical of Piedmont’s highest hills. Produced from a traditional blend of Chardonnay and Pinot Noir, the cuvée originates from vineyards in Bossolasco, one of the most renowned areas of Alta Langa thanks to its marl soils and cool climate. The significant temperature shifts between day and night enhance aromatic concentration, slow ripening and a naturally vibrant acidity.
After gentle pressing, the must ferments in French barriques, where it matures for several months before the creation of the final blend. The secondary fermentation takes place in bottle, followed by 36 months of ageing on the lees, which provide depth, creaminess and sophisticated complexity. The Pas Dosé style perfectly highlights the purity of the fruit and the mineral backbone of the terroir, avoiding any sugar addition after disgorging.
In the glass, “Psea” reveals a bright golden yellow color with a fine, persistent perlage. The bouquet is layered and expressive, offering ripe yellow fruit, honey, pastry cream, toasted bread, spices and subtle notes of brioche. On the palate, it shows lively freshness and marked sapidity, seamlessly combined with a soft, creamy texture derived from long lees aging. The finish is long, clean and elegant, with mineral undertones that enhance drinkability.
This refined Pas Dosé pairs beautifully with seafood dishes, shellfish, raw fish, sushi, risottos and delicate preparations, confirming itself as one of the most polished expressions of modern Alta Langa sparkling wine.
