Vino Bianco da Uve Stramature “Biondin” – Castello di Montecavallo
The “Biondin” Sweet White Wine from Castello di Montecavallo is a unique expression of tradition, territory and storytelling. Its name pays tribute to Francesco “il Biondin” Demichelis, the last romantic brigand of the Biellese area—elegant, reckless and beloved by the people, a true local hero reminiscent of an Italian Robin Hood.
The wine is produced from native white grapes grown on the moraine slopes of the Serra hill. After harvest, the grapes rest in the estate’s traditional passitaia until Christmas, allowing natural drying that concentrates sugars and aromas.
The must undergoes gentle pressing, followed by a two-day cryomaceration in the natural winter cold. Fermentation begins slowly in oak barrels at the start of the new year and continues until spring, transforming this golden nectar into an elegant, refined wine.
In the glass, it shines with a brilliant golden color. The nose reveals sweet honey notes, evolving into more sensual hints of citrus and candied fruit. On the palate, it is smooth, sweet yet pleasantly fresh, with a long, persistent finish marked by vanilla tones and candied citrus.
“Biondin” is the perfect wine to enjoy on its own at the end of the day, or paired with dried pastries and blue cheeses.
