“Changes!” 2020 Sopravvento
The “Changes!” 2020 by Sopravvento is the foundational wine of the estate, representing the origin of its winemaking journey and the clearest expression of its philosophy. First conceived and vinified in 2019, it is crafted as a free, identity-driven white wine made from native white grape varieties that remain undisclosed, hand-harvested at full physiological ripeness.
Harvest timing varies each year depending on climatic conditions and grape development, aiming to achieve an optimal balance between acidity, ripeness and aromatic complexity.
Winemaking follows a natural and artisanal approach. Fermentation occurs spontaneously with indigenous yeasts, without selected inoculation, preserving the vineyard’s microbial identity. This is followed by an extended skin maceration of approximately 40 days, carried out in stainless steel, including a portion of whole clusters, which contributes additional structure and complexity uncommon in white wines.
After maceration, the wine is aged for around 10 months in neutral acacia barrels, which allow slow and respectful evolution without imposing dominant wood aromas, enhancing instead the wine’s natural expression.
The wine is then bottled and moved into a defining element of the project: a historic 1800s Balmetto, a natural cellar carved into rock formations, characterized by constant temperature and humidity throughout the year due to unique geological phenomena. This bottle aging phase, which varies depending on the vintage, plays a crucial role in shaping the wine’s final identity.
In the glass, “Changes!” is a bold and characterful white wine, combining texture, tension and aromatic depth. Its structure is significant, supported by tannins derived from skin contact, while the palate remains dynamic and evolving.
The aromatic profile reveals notes of ripe fruit, wild herbs, subtle oxidative nuances and mineral undertones, while the palate is rich, savory and persistent, leading to a long and layered finish.
A gastronomic wine designed for food pairing, it works beautifully with herb-based soft cheeses, pumpkin dishes and shellfish, as well as more contemporary and structured cuisine.
