“13 Bulles” Domaine Les 13 Lunes
“13 Bulles” from Domaine Les 13 Lunes is one of the purest expressions of natural sparkling wine from the Savoie region, crafted using the ancestral method, a traditional technique that relies entirely on spontaneous fermentation and minimal intervention. The result is a living, energetic and highly expressive wine.
Made exclusively from Jacquère, the emblematic grape of Savoie, this wine is designed to highlight the variety’s natural freshness and lively acidity without any stylistic compromise. The philosophy behind it is to preserve the grape’s primary aromas and the authenticity of fermentation in its most natural form.
The winemaking process is entirely artisanal and carried out without the addition of sulphites: only naturally occurring sulphites from fermentation are present. Fermentation takes place at low temperature, around 15°C, to preserve aromatic purity. The wine is then filtered and bottled without dosage, ensuring a dry and direct style.
Secondary fermentation occurs in bottle following the ancestral method, resulting in a lightly cloudy wine that is intentionally un-disgorged. Any natural sediment at the bottom of the bottle is a normal characteristic of this style and a clear sign of its authenticity and artisanal production.
In the glass, it shows a fine and delicate mousse with a slightly hazy appearance. The nose is fresh and expressive, offering green apple, pear, crisp citrus and subtle floral notes, along with a gentle yeasty character.
On the palate it is dry, lively and highly drinkable, with a fine bubble structure supporting a crisp and refreshing mouthfeel. Acidity is bright yet well integrated, leading to a clean, direct and lightly fruity finish.
“13 Bulles” is a wine built on immediacy and purity of expression. Ideal as an aperitif, it pairs naturally with light fried foods, fresh cheeses, delicate charcuterie and simple alpine cuisine, offering an unfiltered and authentic taste of Savoie.
