Savigny-lès-Beaune 1er Cru Les Lavières Magnum 2015
Savigny-lès-Beaune 1er Cru Les Lavières Magnum 2015 by Chandon de Briailles is a biodynamic 100% Pinot Noir, crafted from old vines planted in 1954 on a Premier Cru parcel named after the local limestone slabs ("lavières"). The vineyard lies on a mid-slope with south-southeast exposure, shallow calcareous soils and some clay, ideal for producing wines of great aromatic clarity and structure.
Vinification is traditional: whole cluster fermentation in open vats with wild yeasts, a few days of semi-carbonic maceration, followed by gentle punch-downs and pump-overs. The wine then ages for two winters in French oak barrels, without fining, filtration, and with minimal sulfur (only 20–30 mg/l before bottling).
The wine shows a brilliant ruby hue. On the nose, it delivers layered aromas of lavender, blackberries, licorice, and a distinctive mineral backbone. The palate is medium-bodied and velvety, with fine tannins and vibrant tartaric acidity that brings freshness and long, refined persistence.
A wine made for aging, it will evolve beautifully over the next 10+ years. Best enjoyed with roasted meats or aged cheeses, served around 16°C.
