Domaine Jolivet is a family estate dedicated to expressing the true character of Saint-Joseph. In the glass, L’Instinct 2023 displays a deep garnet-red colour. The nose is intense and complex, revealing aromas of fresh black fruits such as blackberry and blackcurrant, followed by floral notes of violet, characteristic spicy hints of black pepper, smoky nuances and a delicate meaty character reminiscent of cured bacon. Subtle cocoa and sweet spice notes add further complexity.
The palate is generous, round and beautifully textured. The wine offers a rich fruit profile supported by silky, well-integrated tannins and a vibrant mineral freshness. Its structure is impressive without being aggressive, leading to a long and powerful finish marked by dark fruit, spices and elegant savoury notes.
