Saint-Aubin Premier Cru "Murgers des Dents de Chien" 2022 from Domaine Larue embodies the elegance of Burgundy's terroir. Its vines, carefully nurtured on unique limestone soil, stand proudly in the southern part of Saint-Aubin, bordering Puligny-Montrachet, next to the prestigious Grand Cru Montrachet. These Chardonnay vines, planted since 1946 on a small patch of land, thrive on terrain characterized by rocky outcrops reminiscent of a dog's teeth.
At Domaine Larue, viticulture follows a strict protocol, with simple Guyot pruning and spring thinning. Disease control in summer is carried out sparingly, respecting the vineyard's natural balance.
Vinification is a delicate process, with meticulous hand harvesting and careful attention to maturation. After gentle pressing, the juice is transferred to oak barrels, where it ferments and ages for 12 months on fine lees. It then undergoes further refinement in temperature-controlled stainless steel before bottling, preceded by light filtration and fining.
The result is an extraordinary wine, with a sparkling green hue and a distinctive mineral bouquet reflecting its unique terroir. On the palate, it unfolds with elegance, leading to a rich and enveloping finish. This cuvée produces approximately 7,000 bottles and can be enjoyed now or aged for 4-10 years. Best served at a temperature between 11°C and 13°C, perhaps paired with lightly seared langoustines for an unforgettable tasting experience.
