Pecorino d'Abruzzo "Bianchi grilli per la testa" 2019 Torre dei Beati

Pecorino d'Abruzzo "Bianchi grilli per la testa" 2019 is a white wine from Abruzzo produced by Torre dei Beati. It is made from 100% Pecorino grapes from an area of half a hectare, on clayey-calcareous soils.

Both in the vineyard and in the cellar are applied principles of organic farming, far from fashions and homologations and in full respect of the terroir. Vinification is done in barrique where the wine is aged for 11 months, followed by 8 months in bottle. The aging on fermentation yeasts exalts the aromatic part of the grape, in particular the spicy and aromatic component which characterizes this grape and is a bit more hidden when young.

The taste is well balanced between freshness and minerality typical of Pecorino as well as smoothness due to the aging in wood. A charming white wine to be matched with typical Abruzzi's dishes such as the famous lamb "cace e ovo" or stewed cod.
