Ad Nonam Passito 2019 Tenuta Mosole
The Ad Nonam Passito 2019 IGT Veneto by Tenuta Mosole is the result of years of experimentation and dedication, leading to a dessert wine of exceptional complexity, elegance and concentration. It is crafted from a carefully selected blend of white grapes, harvested by hand and destined for a meticulous natural drying process.
The grapes undergo natural appassimento in small crates, placed under a south-west facing shelter from September to December. During this period, the berries gradually dehydrate, leading to a significant concentration of sugars and aromatic compounds, while developing colors ranging from golden yellow to bronze. In favorable vintages, the formation of noble rot (botrytis) enhances the wine’s aromatic complexity.
The weight loss is substantial, resulting in a final yield of approximately 25%, a clear indication of its richness. The grapes are gently pressed to obtain a dense must, which is then warmed and fermented in 225-liter French oak barrels. Fermentation is stopped by cooling when the wine reaches around 12% alcohol, preserving a residual sugar level between 180 and 200 g/l, essential to its luscious character.
The wine then ages for about 18 months in oak barrels, with constant monitoring and tasting to achieve optimal balance. The result is a wine that perfectly combines sweetness, structure and aromatic depth.
On the palate, it is defined by a velvety and creamy texture, with notes of ripe fruit, honey and evolving nuances, supported by enough freshness to maintain balance. The finish is long, harmonious and persistent, making it ideal with rich desserts, pastries or blue cheeses. A true meditation wine, showcasing the craftsmanship of Tenuta Mosole.
