He believes the charm of Gamay is best expressed through the indigenous yeast of the grape, rather than through the addition of industrial yeast, and he is one of the few who thinks so in Beaujolais. So his wines, characterized by great elegance and value, are able to change the minds of those who devalue this area and the Gamay grape.
