The Erbaluce di Caluso Spumante “Incanto 80” 2013 represents the pinnacle of the Classic Method at Cantine Crosio. Produced from carefully selected Erbaluce grapes grown on traditional Canavese pergolas, in vineyards aged 10-30 years at 320-340 meters above sea level on morainic soils rich in gravel and sand, this wine exemplifies the perfect harmony between territory, grape variety, and winemaking. Hand-harvested grapes, collected in small crates, ensure the highest quality for this exceptional sparkling wine.
Vinification begins with cryomaceration of whole clusters for approximately seven days at 0°C, followed by gentle pressing and must decanting. Alcoholic fermentation takes place in stainless steel at a controlled temperature of 15°C with selected yeasts, followed by 9-10 months aging on its lees in steel tanks with frequent batonnage, adding complexity and roundness. Secondary fermentation in the bottle, with 80 months of lees aging, develops an extremely fine perlage and elegant structure, while final disgorgement preserves freshness and integrity. “Incanto 80” is produced only in the most exceptional vintages.
The wine shows a deep golden-yellow color, brilliant and luminous. The nose is alluring and complex: cooked fruit, quince and apricot preserves, honey, hawthorn, and subtle hints of fine wood create depth and charm. On the palate it is silky and fresh, with mineral and saline notes that balance the body and width of the wine, culminating in a persistent and harmonious finish.
It pairs beautifully with a Royal Plateau of raw shellfish, crispy fried fish, seafood pasta even enhanced with bottarga, and is equally delightful with white meats, smoked soft cheeses, and semi-aged cheeses.
