The Erbaluce di Caluso Spumante Pas Dosé “Cassiopea” 2011 by Fontecuore is an outstanding example of Piedmont’s sparkling winemaking tradition. Crafted from 100% Erbaluce grapes grown on the Serra Morenica, this organic wine embodies Fontecuore’s commitment to sustainability, terroir expression, and minimal intervention.
Made using the traditional method (Metodo Classico) with an extended lees aging, “Cassiopea” captures the unique minerality and structure of the Erbaluce variety — a native grape whose name derives from “Albalucente”, meaning “white light”.
In the glass, it shines with a bright straw-yellow hue and fine, persistent bubbles. The bouquet is complex and elegant, opening with floral tones of acacia, hawthorn, and wild chamomile, followed by hints of white fruit, bread crust, honey, and subtle mineral notes.
On the palate, it’s dry, crisp, and savory, with vibrant acidity and a refined mouthfeel. The long maturation lends it body, roundness, and balance while preserving remarkable freshness despite its vintage.
A Pas Dosé Metodo Classico of great finesse, perfect as an aperitif or paired with seafood, risottos, light fried dishes, or white meats. For connoisseurs, it can even accompany mildly sweet pastries.
