Redentum 2017 Erbaluce di Caluso Spumante Cellagrande
The Redentum 2017 Erbaluce di Caluso Spumante by Cellagrande is one of the finest expressions of the Erbaluce grape, embodying the unique freshness and minerality of the Canavese region in northern Piedmont. The vineyards, located between Viverone and Piverone at about 300 meters above sea level, grow on morainic soils rich in minerals, with a north-south exposure that enhances aromatic complexity. The dry and hot 2017 vintage produced grapes with remarkable concentration and perfect ripeness.
After manual harvesting, the grapes are gently pressed whole and fermented in temperature-controlled stainless steel tanks. The base wine rests for six months on its lees with periodic bâtonnage, followed by 36 months of bottle aging “sur lattes”, which gives finesse, structure and depth.
Bright deep straw-yellow in color, it opens with elegant aromas of pastry, white flowers and bread crust. The palate is structured and savory, with a creamy texture and a persistent, fine perlage. The finish is long and complex, marked by fresh mineral tones and citrus notes of orange peel.
Redentum 2017 is a superb Metodo Classico, combining the freshness of Erbaluce with the complexity of extended lees aging — ideal as an aperitif or paired with fish dishes, shellfish, sushi or fine cheeses.
