Côtes Catalanes Blanc Coume Gineste 2018 Domaine Gauby 

Côtes Catalanes Blanc IGP "Coume Gineste" 2018 by Domaine Gauby is an organic white wine from Languedoc-Roussillon made from a blend of grenache blanc and gris from old vines about 60 years old facing north, located at about 200 meters altitude on grey shale and clay-limestone soils.

Each step is done with absolute rigor and respect for nature. Fermentation and aging take place for 12 months in barriques, half new and half second passage, with frequent bâtonnage.

Straw yellow in color, it expresses an intense and elegant nose of ripe plum, citrus fruit, hazelnut and a hint of spicy cookie. In the nose it is well balanced by body and sapidity.

GRAPE VARIETIES: Syrah, Grenache, Carignan, Mourvèdre 

VINIFICATION: fermentation and aging for 12 months in barrique, half new and half second passage, with frequent bâtonnage.

Domaine Gauby is a reference point for the production of French natural wines. Located at Calce, in Roussillon, the Domaine has about 45 hectares of vineyards with plants which are more than one century old. Respect for ecology is the philosophy at the base of this winery, certified organic since 2001, in the cellar as well as in the vineyard are practiced the least possible interventions, with the exclusive use of indigenous yeasts, no acidification of the wine nor sweetening of the must, no clarification nor filtration.
