The Cornas "Chaillot" 2021 by Franck Balthazar is a pure, traditional expression of northern Rhône Syrah, crafted with the same artisanal philosophy that has defined the estate since 1931.
Sourced from old vines replanted post-phylloxera on the renowned Chaillot lieu-dit, the grapes are grown organically and worked by hand, with some vineyard work still done on horseback. The soils are steep granite terraces, giving the wine its trademark structure and mineral tension.
The vinification is classic: 100% whole-cluster fermentation with indigenous yeasts in concrete vats, followed by 12–15 days maceration and aging for 18 months in used 600-liter demi-muids, preserving the purity of fruit and site. Minimal sulfur is used, and there is no filtration.
The wine opens with aromas of ripe plum, violet, black pepper, olive tapenade, and crushed stone. On the palate, it is rich and meaty yet fresh, with grippy tannins, earthy minerality, and a long, precise finish.
