Chinon “Le Domaine” 2021 Bernard Baudry
The Chinon “Le Domaine” by Bernard Baudry is one of the most authentic expressions of Cabernet Franc in the Loire Valley. It reflects the philosophy of a winemaker who skillfully blends tradition with modern precision. The vineyards, located in Cravant-les-Coteaux, benefit from a unique geological composition: 70% sandy-limestone plateaux and 30% gravelly soils, giving the wine an elegant balance between freshness, minerality, and structure.
The vines, averaging 30-35 years of age, have been cultivated organically since 2006, with no herbicides, preserving the biodiversity of the estate. Harvesting is done by hand, ensuring careful selection of the grapes. Fermentation lasts about two weeks in cement vats, followed by 15 months of aging in raw cement or oak vats. Bottling occurs two springs after harvest, without filtration, to maintain the wine’s purity and character.
In the glass, the Chinon “Le Domaine” shows a vibrant ruby-red color. The bouquet is elegant and complex, offering aromas of red fruits, floral hints, and a subtle minerality that reflects the limestone soils. On the palate, it displays fine, silky tannins combined with a lively freshness that enhances drinkability. The finish is long and persistent, with refined citrus nuances that brighten the profile.
This cuvée has an aging potential of 5 to 10 years, during which it develops greater aromatic depth and complexity. Ideal with a wide range of dishes, it pairs particularly well with red meats, game, mushroom-based recipes, and for the most refined pairings, beef carpaccio with white truffle.
A wine that embodies the heritage, elegance, and authenticity of the Chinon appellation, crafted by Bernard Baudry, a benchmark name in the Loire Valley.
