Chablis 1er Cru Vau de Vey 2023 Domaine de Moor
Chablis 1er Cru Vau de Vey 2023 Domaine de Moor is a highly expressive and contemporary interpretation of Chablis terroir, crafted by Domaine de Moor, one of the most respected artisan producers of the new generation in Burgundy.
The Vau de Vey climat, located on the left bank of the Serein, is known for producing wines with strong tension and definition. The vineyard covers just 0.9 hectares, planted at a density of 5,500 vines per hectare with an average vine age of 30 years. Yields are extremely low at 21 hl/ha, contributing to the wine’s concentration and intensity.
The soils are composed of Kimmeridgian marl and limestone rich in marine fossils, the geological backbone of great Chablis wines, imparting a sharp, chalky and saline mineral signature.
In the cellar, Domaine de Moor follows a minimal-intervention approach: gentle pressing, spontaneous fermentation with indigenous yeasts, and ageing in second-fill demi-muids for around 12 months. The use of neutral oak preserves purity while adding subtle texture without masking the fruit.
The wine shows a highly pure and linear profile. The nose reveals fresh citrus, white flowers, delicate herbs and a pronounced stony, iodised character, typical of top Premier Cru Chablis.
On the palate it is tense, vibrant and dynamic, driven by a precise acidic backbone that gives direction and energy. The structure is sleek yet deep, supported by strong salinity that extends the finish.
The finish is long, saline and highly precise, with pure mineral echoes and exceptional clarity. With a low total sulphur level (40 mg/l), the wine maintains a natural, unforced expression consistent with Domaine de Moor’s philosophy.
