The Chablis 1er Cru Vau de Vey 2017 from Domaine Jeremy Arnaud is a sublime expression of Chardonnay cultivated on steep limestone slopes. Planted between 1980 and 1985, the vines face a 50% slope, imparting extraordinary complexity to the wine. Manual harvesting ensures the selection of the finest grapes.
In the cellar, a natural approach prevails, with gentle pressing and spontaneous fermentation. The pre-oxidation period, without the use of sulfites, prepares the must for a balanced alcoholic fermentation. After a brief sulfiting, the wine rests in cold storage, followed by maturation in stainless steel tanks and wooden barrels. Only 10% of the barrels are new, preserving the purity of the fruit.
The result is an elegant Chablis with notes of white fruit, apple, and warmer nuances, enriched by minerals and chalk. On the palate, tension, freshness, and balance merge, offering delightful complexity. A wine suitable for aging, ideal with seafood dishes.
