The Chablis 1er Cru Beauregard “Mise Tardive” 2019 by Domaine Pattes Loup is a profound and distinctive expression of Chardonnay from Chablis. Rather than relying solely on the lean, razor-sharp profile often associated with the appellation, this wine reveals how richness, depth and minerality can coexist within a great Premier Cru.
The cuvée comes from the Beauregard Premier Cru climat, situated on the left bank of the Serein. The vineyards are predominantly south-facing and lie towards the bottom of the valley, where the particular location helps preserve a naturally cool climate. The soils are shallow and clay-rich, with abundant limestone marl and stones, providing excellent drainage and contributing to the wine’s mineral backbone. The vines are approximately 25 to 50 years old, producing fruit that combines concentration with freshness and tension.
At Domaine Pattes Loup, Thomas Pico follows an approach centred on living vineyards and the natural expression of Chardonnay. Fermentation takes place spontaneously with native yeasts, while only minimal amounts of sulphur are used. The wines are bottled without filtration, allowing their texture, aromatic complexity and sense of place to remain intact. Extended ageing gives the wine time to develop without sacrificing energy or precision.
The 2019 vintage expresses this philosophy with particular clarity. The aromatic profile is deep and layered, combining confit lemon, dried apricot, almond, chamomile and honey with hints of mint, spice and freshly baked bread. Beneath the ripe fruit remains a distinctly mineral and saline character, keeping the wine focused and preventing its richness from becoming heavy.
On the palate, the wine is full, satin-textured and multidimensional. The opening is broad and enveloping, followed by a lively progression supported by vibrant acidity and a pronounced saline structure. There is considerable weight and concentration, yet the wine maintains remarkable energy through to an exceptionally long finish, where the mineral character once again comes to the fore.
This is a Chablis with genuine personality, showing a richer, deeper and more generous side of the appellation while retaining the precision and mineral identity associated with its limestone origins. A wine to savour slowly, allowing it to unfold in the glass and pairing it with refined seafood and substantial marine dishes.
