Canavese DOC Rosso “Balmetto” 2018 Terre Sparse
The Canavese DOC Rosso “Balmetto” 2018 is the flagship expression of Terre Sparse, crafted to showcase the full potential of the Canavese terroir through time and careful aging. It comes from vineyards with an average age of around 30 years, rooted in morainic soils with medium texture, which contribute to structure and aromatic depth.
Harvest takes place in late October, with a late harvest approach and strict manual selection of the best grapes, collected in small crates. In the winery, grapes are destemmed and crushed, followed by a fermentation lasting 12–15 days, ensuring optimal extraction of color, tannins and body. After racking, only the free-run wine is selected for aging.
What truly defines this wine is its maturation in the Balmetto, a natural cellar formed centuries ago by the Balteo glacier. Thanks to its constant airflow and stable temperature, this environment provides ideal conditions for aging first in wood and then in bottle, allowing a slow and balanced evolution.
In the glass, it shows a deep ruby red color with garnet reflections. The bouquet is complex and layered, with ripe red fruits, spices, tertiary aromas and evolved nuances. On the palate, it is full-bodied, powerful and enveloping, with firm yet refined tannins and a long finish.
“Balmetto” is designed for important dishes and special occasions, pairing perfectly with red meats, game and aged cheeses, while also offering excellent aging potential. A wine that captures the essence of mountain, time and tradition.
