Asti Spumante 2021 – Ca’ d’Gal
The Asti Spumante 2021 by Ca’ d’Gal perfectly embodies the refined and authentic soul of Piedmont’s Moscato Bianco. It comes from vineyards located in Valdivilla, near Santo Stefano Belbo, one of the most renowned areas for this grape variety. The vines, aged between 20 and 45 years, grow on white marl and blue clay soils at about 400 meters above sea level, facing north to ensure a slow, even ripening and the preservation of natural freshness and aromatic purity.
Harvesting is done by hand in early September, selecting only the healthiest and ripest clusters. The grapes undergo a gentle pressing, followed by fermentation in stainless steel tanks using the Charmat method, at controlled temperatures of 16–18°C, to retain the natural aromas and achieve a fine, persistent mousse.
In the glass, it shines bright straw-yellow with golden reflections and a delicate, continuous perlage. The nose offers rich and refined aromas of elderflower, ripe peach, citrus, sage and honey, with subtle hints of moss. On the palate, it is fresh, harmonious and vibrant, combining sweetness and acidity with elegance and depth.
This Asti Spumante is a versatile sparkling wine: traditionally paired with panettone, fruit tarts and other festive pastries, yet surprisingly delightful with oysters, prawns or seafood dishes, thanks to its mineral freshness and aromatic complexity.
