Amarone della Valpolicella DOCG Classico “Piovesole” 2017 Magnum Eleva
The Amarone della Valpolicella DOCG Classico “Piovesole” is Eleva’s flagship wine, crafted in Sant’Ambrogio, in the prestigious Conca d’Oro area, one of the most renowned crus of Valpolicella. The blend includes Corvina Veronese (40%), Corvinone (20%), Rondinella (25%), and a mix of Croatina, Teroldego, Merlot, and Oseleta (15%).
Harvested by hand in mid-September, the grapes are placed in ventilated drying rooms (fruttai) for 120 days, where dehydration naturally concentrates sugars and polyphenols. In January-February, the grapes are destemmed, pressed, and fermented in stainless steel at controlled temperature, with long maceration on the skins to extract intense aromas and structure.
The wine is aged in 25 hl oak casks, where natural micro-oxygenation softens tannins and develops aromatic complexity, followed by at least 9 months of bottle aging. The result is a powerful yet harmonious Amarone, with deep notes of ripe red fruit, dried plums, spices, and a warm, velvety, lingering palate. A prestigious wine, perfect for fine dining or long-term cellaring.
